Cutlassfish

It is easily found in all littoral seas of Korea (especially in western and southern sea) and it is widely spread throughout Japanese seas, east Chinese seas, and world's seas with temperate climate regions or subtropical regions. It is rich in protein, has adequate amount of fat, and has high sugar content, which is unique for a fish, so has a characteristic elegant taste. It is soft because it has high oleic acid content.

Yellow Corvina

It has a characteristic of grouping together in the spawning pool and making froglike sounds or jumping above water during spawning season. They usually eat crustacean 'animal planktons'. It is rich in protein and vitamin A and D so, when eaten when enervated, it helps regain one's vigor, and it also helps with night blindness and ophthalmopathy in general. Not only is it good for fatigue recovery for the body and the soul, it is, because of low fat content, easily digested so it is especially good for developing children or elderly, with weak digestive system.

It is spread in southwestern seas of Korea and it lives in shallow seas where the floor is formed of mud. It has high taurine content, which not only gives it its characteristic flavor, but also helps with the function of the liver, heightens energy levels as it activates metabolism, and has the power to improve anaphrodisia.

Skate

Skate has a diamond shape body with a large width, a small head, and a protruding mouth. Skate is an alkaline food product, and has more nitrogen compound, such as urea, ammonia, and trimethylamine acid, than other fishes, so it has a sensational smell and taste. Sliced raw skate, braised skate, and fermented skate and steamed pork slices served with kimchi are representative foods made with skate. Skate is ordinarily fermented and is either sliced raw, braised, or made into a soup, and it is characteristic for its hot and sticky taste. The bridge of the nose, characteristic of its pungent taste, wings, where the bones are chewed, liver, and fragrant intestine parts are its highlights. Sliced raw skate is eaten with soy sauce mixed with vinegar, oil, or salt after it has been sliced in an adequate size, and its true worth can be experienced when makgeolli is added. Eaten like this, with makgeolli, is called hongtak, and eaten together with steamed pork slices and kimchi, it is called samhap. Its taste is impossible to describe with words.

Salted seafood

Salted seafood is a unique Jeolla-do food. Jeolla-do's salted seafood, made with fresh seafood, as the sea is close and salty seafood is abundant, is loved by many for its characteristic salty taste. Salted seafood, unless salted, cannot last for a long time nor have deep taste. Thus, on the intestines of fishes salt is poured in to prevent reproduction of putrefactive bacteria. With the enzymes originally from the fish and the enzymatic reactions from foreign microorganisms, the meat is decomposed and thus, as a fermented food product, gives its characteristic unique taste.
